Thai Salad with Grilled Chicken and Warm Pineapple Recipe

A light, colorful salad with grilled chicken and pineapple that in Thailand could easily pass as a full lunch on a hot day. It’s sweet and sour, slightly spicy, and very fresh – a bit like a cross between a grill salad and Thai street food. Perfect when you’re craving something lighter than classic curry but still want those Thai flavors.

In Thai beachside food stalls, warm salads with grilled meat and fruit are a popular way to get a quick meal that combines something from the grill with a light, herb‑packed salad. Pineapple shows up often in spicy dishes there, because it naturally boosts the salty‑sour profile of the sauces.

It’s more of a light warm main than a typical “cold salad”, so it works well even outside the summer season. The caramelized pineapple cuts through the saltiness of the fish sauce and the heat of the chili, so the dish is bold but not overwhelming. Altogether it feels like a little bowl of beach street food, just in a home‑style version.

A good sign is when the leaves are evenly glossy from the dressing but there isn’t a puddle of it sitting at the bottom of the bowl.

How to serve

Serve as a standalone dish for a light summer lunch, with a small bowl of jasmine rice on the side for hungrier eaters. For a party, pile the salad onto a large platter and set extra lime, chili, and peanuts next to it so everyone can tweak their own portion.

Watch out for

  • Don’t fry the pineapple for too long – once the edges are golden and lightly browned, take it off right away, otherwise it will turn fibrous.
  • If you add all the dressing too early, the lettuce will wilt and release water, and a watery dressing will collect at the bottom of the bowl.

Substitutions

  • You can swap romaine lettuce for iceberg or any mix of crunchy salad greens.
  • Swap peanuts for cashews or toasted sunflower seeds if you avoid nuts.
  • You can replace the chicken with grilled tofu cubes for a vegetarian version.

Ingredients

  • skinless chicken breast - 350 g
  • pineapple slices, fresh or canned - 200 g
  • romaine or iceberg lettuce - 120 g
  • cherry tomatoes - 120 g
  • fresh cucumber - 0.5 piece
  • unsalted peanuts - 30 g
  • oil roślinny - 2 tablespoons
  • fish sauce rybny - 1.5 tablespoons
  • lime juice - 2 tablespoons
  • sugar trzcinowy - 1 tablespoon
  • garlic - 1 clove
  • red chili pepper - 0.5 piece
  • fresh coriander - 2 tablespoons
  • salt
  • black pepper czarny mielony

Preparation

  1. Rinse the chicken breast, pat dry with paper towels and cut into thin strips or small pieces. Season lightly with salt and pepper.
  2. Heat 1 tablespoon of oil in a grill pan or regular frying pan over medium heat. Arrange the chicken pieces in a single layer and fry for 6–8 minutes, turning every few minutes, until cooked through in the center and lightly browned on the outside. Transfer to a plate.
  3. In the same pan add the second tablespoon of oil, lay in the pineapple slices and fry for 2–3 minutes on each side, until golden grill marks appear and the pineapple softens slightly. Remove from the pan and cut into smaller pieces.
  4. Wash and dry the lettuce, then tear it into smaller pieces. Slice the cucumber into half-moons and cut the cherry tomatoes in half.
  5. In a small bowl mix the lime juice, fish sauce, brown sugar, finely chopped garlic and finely chopped chili. Stir with a spoon until the sugar dissolves. Taste and, if needed, add a little more sugar or lime juice so the dressing is salty, sour and slightly sweet at the same time.
  6. On a large plate or in a bowl arrange the lettuce, cucumber and tomatoes. Add the warm chicken and pineapple pieces.
  7. Drizzle everything with the lime and fish sauce dressing. Gently toss with your hands or large spoons so the dressing coats the ingredients without crushing the lettuce.
  8. Sprinkle the salad with chopped peanuts and fresh coriander. Serve immediately, ideally while the chicken and pineapple are still slightly warm.
