Thai Tofu and Vegetable Skewers from the Grill Recipe

Colourful skewers with marinated tofu and vegetables are a plant-based version of Thai street food, perfect for the grill or a grill pan. In Thailand you can find countless skewers on the streets – usually meat-based, but increasingly also vegetable. This dish is great for a party when you want to surprise guests with something other than classic grilled sausage.

Ingredients

  • firm natural tofu - 400 g
  • red bell pepper czerwona - 1 piece
  • yellow bell pepper żółta lub zielona - 1 piece
  • zucchini - 1 piece
  • onion czerwona - 1 piece
  • oil roślinny - 3 tablespoons
  • soy sauce sojowy - 3 tablespoons
  • lime juice - 2 tablespoons
  • garlic - 2 cloves
  • honey or maple syrup - 1.5 tablespoons
  • chili pepper - 0.5 pieces
  • fresh ginger - 10 g
  • fresh coriander - 2 tablespoons
  • roasted peanuts - 2 tablespoons
  • skewers - 12 pieces

Preparation

  1. Remove the tofu from the packet and dry thoroughly with paper towel. If you have time, wrap the tofu in several layers of paper towel, place a plate with a light weight on top and leave for 15 minutes to remove excess water. Then cut the tofu into approx. 2–2.5 cm cubes.
  2. Deseed the peppers and cut into larger squares. Cut the zucchini into half-slices about 1 cm thick. Peel the onion and cut into larger pieces (quarters, then each into 2–3 parts).
  3. In a bowl, prepare the marinade: mix the oil, soy sauce, lime juice, honey or syrup, grated ginger, garlic and chopped chili pepper.
  4. Add the tofu cubes to the marinade and gently mix so each piece is coated with the sauce. Set aside for at least 15 minutes (preferably 30 minutes) in the fridge, gently stirring from time to time.
  5. If using wooden skewers, soak them in cold water for at least 20 minutes so they don’t burn on the grill.
  6. Heat the grill, grill pan or oven with grill function. If using a pan, lightly brush it with oil.
  7. Thread tofu and vegetables alternately onto the skewers: a piece of pepper, tofu, zucchini, onion, tofu, etc., until the skewer is filled, leaving about 2 cm free at each end.
  8. Brush the skewers with the remaining marinade.
  9. Grill the skewers for 10–15 minutes, turning every few minutes, until the tofu and vegetables are lightly browned and the edges of the vegetables are slightly charred. On a grill pan use medium heat so the marinade doesn’t burn.
  10. Sprinkle the finished skewers with fresh coriander and chopped peanuts. Serve immediately, preferably with jasmine rice or a simple cucumber salad.
