Thai Garlic-Pepper Chicken with Rice Recipe
This is one of those Thai dishes people order when they want something simple yet very aromatic. Lots of garlic, plenty of freshly ground pepper, tender chicken and a bowl of rice – a bit like our pan-fried chicken, just with an Asian character.

- chicken breast - 350 g
- garlic - 6 cloves
- freshly ground black pepper - 1 teaspoon
- soy sauce sojowy jasny - 2.5 tablespoons
- oyster sauce ostrygowy - 1.5 tablespoons
- sugar trzcinowy - 1 teaspoon
- oil roślinny - 2 tablespoons
- jasmine rice jaśminowy - 240 g
- chives or spring onion - 2 tablespoons
- fresh cucumber - 0.5 piece

Preparation
- Rinse the jasmine rice under cold water until the water is almost clear. Cook according to the package instructions (usually about 12 minutes in water in a 1:1.5 ratio), then leave covered for a few minutes.
- In a bowl, mix soy sauce, oyster sauce, sugar and half of the freshly ground pepper.
- Heat the oil in a pan over medium heat. Add the chopped garlic and fry for 30–40 seconds, stirring, until fragrant and lightly golden but not deeply browned (any bitter pieces should be discarded).
- Add the chicken pieces. Fry for 5–7 minutes, stirring often, until the meat is completely white and lightly browned on the edges.
- Pour the prepared sauce into the pan. Stir for another 2–3 minutes, until the sauce thickens slightly and coats the chicken pieces well.
- Sprinkle the chicken with the remaining freshly ground pepper and gently mix.
- Place portions of hot rice on plates. Top with or serve alongside the garlic-pepper chicken.
- Sprinkle the dish with chopped chives or spring onion and serve with cucumber slices to refresh the taste.
