  • canned tomatoes finely chopped or passata - 200 g
  • garlic finely chopped - 3 cloves
  • ginger grated - 2 cm
  • vegetable oil - 2 tablespoons
  • ground turmeric - 0.5 teaspoons
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • ground chili or less if you prefer it milder - 0.5 teaspoons
  • salt to taste
  • lemon juice freshly squeezed - 1 tablespoon
  • fresh cilantro chopped, optional - 2 tablespoons
  • ghee optional at the end for flavor - 1 tablespoon

Preparation

  1. Rinse the lentils in a sieve under running water until the water is almost clear, then transfer them to a pot and pour in 900 ml of water.
  2. Bring the lentils to a boil, skim off the foam from the surface with a spoon, reduce the heat and cook for 12–15 minutes, until the lentils break down and the mixture looks like a thick soup.
  3. While the lentils are cooking, heat the oil in a separate pan over medium heat, add the onion and fry for 5–7 minutes, until it softens and turns lightly golden at the edges.
  4. Add the garlic and ginger and fry for 1–2 minutes, until they become very fragrant but do not brown.
  5. Add the turmeric, cumin, coriander and chili, and fry for 30–40 seconds, stirring, until the spices combine with the fat and form a moist paste.
  6. Add the canned tomatoes, stir and cook for 5–7 minutes, until the sauce thickens and starts to gently bubble with thick bubbles.
  7. Transfer the contents of the pan to the pot with the cooked lentils, mix thoroughly and cook together for another 5 minutes, until the dal is thick but still slightly pourable; if it is too thick, add a little water.
  8. Finally, season with salt and lemon juice, stir, and if using ghee, add it now so it melts on the surface; sprinkle with fresh cilantro just before serving.
