  • canned tomatoes - 400 g
  • coconut milk - 200 ml
  • vegetable oil - 2 tablespoons
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • turmeric - 0.5 teaspoons
  • hot paprika, ground - 0.5 teaspoons
  • salt
  • water - 400 ml
  • fresh cilantro - 2 tablespoons
  • lemon juice - 1 tablespoon

Preparation

  1. Pour the lentils into a bowl, cover with cold water, stir with your hand and pour off the cloudy water; repeat 2–3 times until the water is almost clear, then leave the lentils to drain in a sieve.
  2. Cut the sweet potato into cubes of about 1.5 cm, finely dice the onion, and finely chop the garlic and ginger or grate them on a fine grater.
  3. Heat the oil in a wide pot over medium heat, add the onion and fry for 4–5 minutes, stirring, until it softens and turns lightly golden on the edges.
  4. Add the garlic and ginger and fry for about 1 minute, until you can clearly smell their aroma, but make sure they do not burn.
  5. Add the cumin, coriander, turmeric and hot paprika, stirring for about 30 seconds until the spices foam slightly and become more fragrant.
  6. Add the chopped canned tomatoes, stir and cook for 3–4 minutes, until the sauce thickens slightly and starts to bubble gently.
  7. Add the drained lentils and sweet potato cubes, pour in the water, stir, cover the pot and cook over low heat for 20–25 minutes, until the lentils have broken down and the sweet potato is soft when pierced with a fork.
  8. Pour in the coconut milk, add salt to taste and cook uncovered for another 5 minutes, until the sauce is as thick as cream; finally add the lemon juice and, if you like, sprinkle with chopped cilantro before serving.
