Indian Lentil and Spinach Curry Without Coconut Milk Recipe

This curry, inspired by home-style cooking from Northern India, combines red lentils with plenty of spinach in a light tomato-based sauce without coconut milk. In this version the lentils are cooked without pre-soaking, and the spices fried at the beginning give the dish a deep flavor despite the simple ingredient list.

This dish is inspired by everyday home cooking from Northern India, where lentil-based dals and curries are a staple source of protein., Unlike many Westernized Indian curries that rely heavily on coconut milk or cream, this version uses tomatoes and spices to build flavor, reflecting lighter, more homestyle preparations., The combination of lentils and leafy greens is common across the Indian subcontinent, offering a nutritious, budget-friendly meal that fits easily into vegetarian and vegan diets.

Delivers the comforting feel of Indian dal without relying on coconut milk or cream, making it lighter yet still satisfying., Uses simple, widely available ingredients while capturing the layered flavor of traditional Indian spicing., Naturally vegetarian and easily vegan, it works well for meal prep and freezes beautifully.

Dlaczego ta wersja działa

  • Cooking the red lentils without pre-soaking keeps the method simple while still achieving a creamy, broken-down texture.

Chef's tips

Rinse the lentils thoroughly until the water is almost clear to help prevent foaming and to achieve a cleaner flavor., Let the curry rest for a few minutes before serving; the texture evens out and the spices mellow and blend., Taste and adjust the lemon juice at the end – the right level of acidity really brightens the flavors., If you prefer a thinner, soup-like consistency, simply add a bit more water and adjust the seasoning.

How to serve

Serve with steamed basmati rice for a classic combination., Pair with bulgur, quinoa, or another grain for a hearty, fiber-rich bowl., Scoop up with warm flatbread or a slice of wholemeal bread for a quick, rustic meal., Top with plain yogurt or a plant-based yogurt alternative, plus fresh cilantro if you like herbs.

Na co uważać

  • Do not brown the garlic and ginger, as they can turn bitter and overpower the dish.
  • Red lentils cook quickly and can stick to the bottom of the pot if not stirred regularly, especially toward the end of cooking.
  • Adjust the amount of chili powder carefully; different brands vary in heat, so start with less if you are unsure.
  • Frozen spinach can release extra water; if the curry becomes too thin, simmer uncovered for a few minutes to thicken.

Zamienniki

  • Use kale, Swiss chard, or other leafy greens instead of spinach; just extend the cooking time until tender.
  • Replace vegetable oil with ghee or butter if the dish does not need to be vegan, for a richer flavor.
  • If you don’t have canned tomatoes, use fresh ripe tomatoes, chopped finely, and cook them a bit longer to break down.
  • For a milder dish, reduce or omit the chili powder and rely on cumin, coriander, and turmeric for flavor.

Ingredients

  • red lentils dry - 200 g
  • spinach fresh or frozen, chopped - 200 g
  • onion medium - 1 piece
  • canned tomatoes finely chopped - 200 g
  • garlic - 3 cloves
  • ginger fresh piece - 2 cm
  • vegetable oil - 2 tablespoons
  • ground cumin ground - 1 teaspoon
  • ground coriander - 1 teaspoon
  • turmeric - 0.5 teaspoons
  • chili powder - 0.5 teaspoons
  • water - 700 ml
  • salt to taste
  • lemon juice freshly squeezed - 1 tablespoon
Main Ingredient: red lentils

Preparation

  1. Rinse the lentils in a sieve under running water until the water is almost clear; set aside to drain.
  2. Finely chop the onion; grate the garlic and ginger or chop them very finely.
  3. Heat the oil in a heavy-bottomed pot over medium heat, add the onion and fry for 4–5 minutes until it softens and turns lightly golden.
  4. Add the garlic and ginger and fry for 1–2 minutes until they become very fragrant but do not brown.
  5. Sprinkle in the cumin, coriander, turmeric and chili; stir for about 30 seconds over low heat until the spices darken slightly and start to foam in the oil.
  6. Add the canned tomatoes, stir and cook for 3–4 minutes until the sauce thickens and starts to pull slightly away from the sides of the pot.
  7. Add the rinsed lentils and pour in the water. Stir, cover and cook over low heat for 15–18 minutes until the lentils break down and thicken the soup; stir every few minutes so they don’t stick to the bottom.
  8. Add the spinach (if using frozen, add it straight from the freezer) and cook for another 3–5 minutes until the leaves are completely soft and turn dark green.
  9. Season with salt and lemon juice, stir and taste – the consistency should be thick, like loose mashed potatoes; if needed, add a little water or cook uncovered for a few minutes to reduce.
  10. Set aside for 5 minutes with the lid on so the flavors meld, then serve.

Storage

In fridge: 4 days
Freezing: Yes

Store in an airtight container; the dish thickens, so add a little water when reheating., After defrosting, stir well because the lentils may separate.
