Japanese Matcha Crêpes with White Chocolate Recipe
Thin crêpes with added matcha green tea, served with a creamy white chocolate sauce. In Japan, matcha desserts are very popular in cafés, and these crêpes are a homemade take on trendy sweets. The flavor is lightly tea-like, not too sweet, and the white chocolate gives them a festive touch.

Ingredients
- wheat flour - 160 g
- milk - 300 ml
- water - 80 ml
- egg - 2 pcs
- butter - 20 g
- matcha - 1.5 tsp
- sugar - 1.5 tbsp
- salt - 1 pinch
- white chocolate - 80 g
- cream - 120 ml
- strawberries - 120 g
- oil - 1 tbsp

Preparation
- Put the flour, sugar, salt and matcha powder into a bowl and mix thoroughly so there are no tea lumps.
- In a separate bowl whisk the eggs with the milk, add melted butter and mix.
- Pour the wet ingredients into the dry ones, whisking until you get a smooth batter. Finally add the sparkling water and gently stir it in.
- Set the batter aside for 10–15 minutes so the flour can hydrate.
- In the meantime, make the sauce: gently heat the cream in a small saucepan over low heat until hot but not boiling.
- Remove the pan from the heat, add the white chocolate broken into pieces and stir until completely melted and the sauce is smooth. Set aside to thicken slightly.
- If the strawberries are fresh, wash and slice them; if frozen, thaw and drain off any excess juice.
- Heat a crêpe pan over medium heat and lightly grease it with oil using a brush or paper towel.
- Pour in a portion of batter (about 1 small ladle) and tilt the pan to spread it into a thin layer. Fry for 1–2 minutes, until the edges of the crêpe dry slightly and dry spots appear on the surface.
- Flip the crêpe and cook for about 1 more minute, until lightly golden. Transfer the finished crêpes to a plate and cover with a cloth so they don’t dry out.
- Repeat until you use up all the batter.
- Serve the crêpes folded into triangles or rolled up, drizzled with white chocolate sauce and sprinkled with strawberries.
