Japanese crepes with banana and chocolate Recipe

These are fluffy yet thin Japanese-style crepes, rolled up with banana and drizzled with chocolate. In Tokyo, similar crepes are sold from dessert stands as a sweet snack to enjoy while strolling. At home you can serve them for a weekend breakfast or as a dessert after lunch.

Ingredients

  • wheat flour - 150 g
  • milk - 250 ml
  • egg - 2 pc
  • sugar - 2 tbsp
  • vegetable oil - 1 tbsp
  • baking powder - 0.5 tsp
  • banana - 2 pc
  • chocolate - 80 g
  • cream - 40 ml
  • butter - 10 g
  • salt - 1 pinch

Preparation

  1. Crack the eggs into a bowl, add the sugar and a pinch of salt, and whisk for about 1 minute, until the mixture is slightly foamy.
  2. Add the milk and oil and mix. Then add the flour and baking powder, stirring until you get a smooth, fairly thin batter with no lumps.
  3. Set the batter aside for 5–10 minutes so the flour can swell and the batter thickens slightly.
  4. Heat a small frying pan (about 18–20 cm / 7–8 inches) over medium heat and lightly grease it with butter or oil.
  5. Pour in a small portion of batter (about 1 small ladle), tilting the pan to spread it into a thin layer. Fry for 1–2 minutes, until bubbles appear on the surface and the edges are lightly browned.
  6. Flip the crepe and cook for another 30–60 seconds, until lightly golden. Transfer to a plate and cover with a cloth so they don’t dry out. Repeat until you use up all the batter.
  7. Chop the chocolate and place it in a small bowl. Heat the cream almost to boiling (in a small saucepan or in the microwave), pour it over the chocolate and wait 1 minute, then stir until you have a smooth sauce.
  8. Peel the bananas and cut them into lengthwise strips or thick slices.
  9. Place a few pieces of banana on each crepe and roll it up or fold it into an envelope shape.
  10. Before serving, drizzle the crepes with warm chocolate sauce. You can also dust them with a little powdered sugar.
