Vegetable rice bake with cheese is a homemade dish well known from Polish kitchens, perfect for a meatless lunch using previously cooked rice. It combines fluffy rice, vegetables in a herby tomato sauce and a thin, well‑browned layer of cheese, making it filling but not heavy. This version is flexible – it’s easy to swap in whatever vegetables you happen to have lingering in the fridge.

This is a classic “leftover bake”, typical of Polish homes, where previously cooked rice and odd vegetables are put to good use. Thanks to the tomatoes and basil it has a slightly Mediterranean feel, but it still remains very homely and familiar.

If you use vegetables with a high water content, such as frozen mixes, fry them longer until the pan is almost dry – otherwise the bake will “collapse”. The flavour of the mixture before baking should seem just a bit too strong; after baking and adding cheese everything balances out. If the top is browning too quickly, cover the dish with aluminium foil, dull side facing up.

How to serve

Serve with a simple green salad with a light vinaigrette or with Chinese cabbage slaw to add freshness and crunch. For a more substantial meal, add a spoonful of thick natural yoghurt or a garlic sauce. It also works very well as a warm supper for a larger gathering – it’s easy to cut into squares and serve on a platter.

Watch out for

  • Don’t add the eggs to very hot rice – they can scramble into lumps instead of binding the mixture evenly.
  • If the tomato sauce isn’t reduced enough, water will collect at the bottom of the dish and the base will be soggy.

Substitutions

  • You can replace the rice with millet or pearl barley, cooked al dente.
  • Swap the pepper for broccoli or cauliflower, briefly blanched beforehand.
  • Replace the yellow cheese with mozzarella or a mix including Parmesan for a stronger flavour.
  • You can substitute canned tomatoes with passata, reducing the amount by about 1/4.

Ingredients

  • rice dry, white or brown - 200 g
  • carrot - 2 pieces
  • red bell pepper - 1 piece
  • zucchini small - 1 piece
  • onion - 1 piece
  • garlic - 2 cloves
  • yellow cheese - 150 g
  • eggs - 2 pieces
  • oil - 2 tablespoons
  • canned tomatoes chopped, peeled - 200 g
  • dried basil - 1 teaspoon
  • salt
  • black pepper

Preparation

  1. Rinse the rice in a sieve and cook it in salted water until al dente, so it’s still slightly firm in the centre. Drain and spread in a thin layer on a plate so it can steam off and cool – the grains should separate easily rather than clump together.
  2. Preheat the oven to 190°C (top and bottom heat). Lightly grease a baking dish with oil, including the sides, so the bake doesn’t stick and is easy to slice after baking.
  3. Heat 2 tablespoons of oil in a large frying pan. Add the finely chopped onion and fry for 3–4 minutes, until it softens, turns glossy and slightly translucent but is not yet browning.
  4. Add the diced carrot. Fry for 4–5 minutes, stirring, until it starts to soften – when pierced with a fork it should still offer slight resistance and not fall apart.
  5. Add the diced pepper and zucchini. Fry for 5–7 minutes over fairly high heat until the vegetables soften but remain slightly firm; towards the end add the chopped garlic and fry for about another minute, until you can clearly smell its aroma.
  6. Add the canned tomatoes, basil, salt and pepper. Simmer for 5–7 minutes until the sauce thickens slightly and is no longer watery – when you drag a spatula across the bottom of the pan, the liquid should briefly expose the bottom instead of covering it again immediately.
  7. In a large bowl, mix the rice with the vegetable sauce. Taste and season with salt and pepper so the mixture is slightly more intense than you’d normally like, as the flavour will mellow once you add the eggs and cheese.
  8. In a separate small bowl, beat the eggs with a pinch of salt. Pour into the bowl with the cooled rice and vegetables, mixing thoroughly until the egg evenly coats every grain of rice and piece of vegetable, with no visible yellow “pockets”.
  9. Transfer the mixture to the baking dish, press down lightly with a spoon and smooth the surface. Sprinkle with the coarsely grated cheese to form an even, not too thick layer through which the rice still peeks in a few spots.
  10. Bake for 25–30 minutes, until the cheese has completely melted, is lightly browned in places and the mixture is set – when you press the centre gently with a spoon, no liquid should seep out.
  11. After removing from the oven, leave the bake to rest for 5–10 minutes. During this time it will firm up slightly so that when you cut into it the knife doesn’t “sink in”, and the portions hold their square shape.

After chilling, the rice firms up slightly and the vegetables lose their crunch, but the flavour stays bold. Reheat in the oven or microwave, preferably covered, with a spoonful of water or sauce so the top doesn’t dry out.

I like this bake best when I throw in the last olives from a jar and a piece of pickled pepper – it turns out a bit different every time, but it always disappears from the tray.
