It’s easiest to overdo the frying time for the chicken – take it off the pan as soon as it’s no longer pink inside and golden spots appear., If the sauce in the pan looks like a thin soup, simmer it a bit longer uncovered until it clearly thickens and starts to coat the vegetables., Before baking, be sure to taste the combined mixture – if it’s only just seasoned, the finished bake will taste bland.

Watch out for
- Do not cook the chicken on the pan until fully done – in the oven it can easily dry out.

- If after baking the top looks dry but the centre is still very runny, cover the dish with foil and bake a few minutes longer.
Substitutions

Ingredients
- rice - 250 g
- chicken breast - 400 g
- carrot - 2 piece
- bell pepper - 1 piece
- peas frozen - 100 g
- cream - 150 ml
- chicken stock - 350 ml
- oil - 2 tablespoons
- curry powder - 2 teaspoons
- garlic - 2 cloves
- onion - 1 piece
- salt
- black pepper freshly ground
Preparation
- Rinse the rice in a sieve under running water until the water runs almost clear. Cook in salted water for 2 minutes less than the package instructions so it is still slightly firm in the centre.
- Drain the rice and spread it in a thin layer on a large plate or tray so it can steam off and not clump – the grains should stay loose and springy.
- Preheat the oven to 190°C (top and bottom heat). Lightly grease the baking dish with oil, especially the sides, so the rice and sauce don’t stick after baking.
- Trim the chicken breast of any sinew and cut into roughly 2 cm cubes. Season with salt, pepper and 1 teaspoon of curry powder, mixing thoroughly so every piece is evenly coated.
- Peel the carrot and slice into thin half-slices. Core the pepper and cut into strips or cubes. Peel and dice the onion, finely chop the garlic.
- Heat 1 tablespoon of oil in a large pan. Add the chicken and fry for 5–6 minutes over medium-high heat until it is no longer pink on the outside and small golden spots appear. The inside can still be slightly juicy – the meat will finish cooking in the oven.
- Transfer the chicken to a bowl. In the same pan add the second tablespoon of oil, then the onion, and fry for 3–4 minutes until it softens and becomes slightly translucent. Add the garlic, carrot and pepper and fry for another 4–5 minutes until the vegetables soften but remain slightly crisp.
- Add the remaining 1 teaspoon of curry powder, stir and fry for about 30 seconds until the spice smells intense but does not darken – if it gets too dark it will turn bitter.
- Pour the stock and cream into the pan and add the frozen peas. Bring to a gentle boil and cook for 3–4 minutes over low heat until the sauce slightly thickens and starts to coat the vegetables instead of running off freely.
- Taste the sauce and season with salt and pepper – the flavour should be pronounced, as the rice will mellow it. If you like more heat, add a pinch of chilli or hot paprika.
- In a large bowl mix the cooked rice, sautéed chicken and hot vegetable sauce. Combine thoroughly so every grain of rice is coated in sauce and the meat and vegetables are evenly distributed.
- Transfer the mixture to the baking dish and smooth the top. Place in the preheated oven and bake for 20–22 minutes, until the top is lightly browned and the edges of the bake start to gently bubble.
Storage
After cooling, the rice absorbs more sauce and becomes softer but still creamy. Reheat covered with a tablespoon of water or cream until the edges start to gently bubble again – that’s when the texture is closest to freshly baked.
When I know we’ll be home late, I assemble this bake in advance and keep it in the fridge – in the evening I just slide it into the oven. For myself I always add a handful of fresh coriander or parsley on top, as it really brightens up the curry flavour.
