Thai Pumpkin and Red Lentil Soup with Coconut Milk Recipe

This thick, creamy pumpkin and red lentil soup combines classic Polish pumpkin soup with Thai aromas. Coconut milk, curry paste and lime turn ordinary pumpkin into a warming dish that’s perfect for autumn and winter, when you dream of warmer climates.

This is a spin on Thai coconut soups where local pumpkin is paired with red curry paste and lime. A classic autumn ingredient gets a completely different, Asian character without complicated add-ins.

This soup combines the familiar comfort of classic pumpkin cream with a Thai profile: coconutty, spicy and citrusy. Thanks to the lentils, each bowl is as filling as a main course, yet still light and plant-based. It’s a practical one-pot dinner for cold days that keeps well and is easy to reheat.

  • Red lentils both thicken the soup and add protein, so there’s no need for flour or cream.
  • Sautéing or roasting the pumpkin before cooking brings out a caramelised, deeper flavour.

Chef's tips

If you have a moment, roast the pumpkin with a little oil – the edges should take on a light brown colour, which deepens the flavour and gives it a slightly nutty note. Make sure to rinse the lentils thoroughly until the water runs clear, otherwise the cream can taste chalky and look cloudy. Add the curry paste gradually: different brands vary in heat, so it’s better to stir in an extra teaspoon at the end than to rescue an overly spicy soup.

How to serve

Serve with a spoonful of thick natural or coconut yogurt to soften the heat and add a pleasant contrast. It pairs beautifully with crunchy sourdough bread, naan or garlic croutons for dipping into the cream. It’s also an ideal soup to pour into a thermos for a winter workday or on-the-go lunch.

Watch out for

  • Don’t burn the curry paste, garlic and ginger – if they brown, the soup will turn bitter.
  • Don’t let the soup with coconut milk reach a rolling boil, as the fat can separate.
  • Never add unrinsed lentils, otherwise the cream may turn out floury and cloudy.

Substitutions

  • Instead of butternut squash you can use sweet potatoes, shortening the cooking time by a few minutes.
  • If you don’t like coriander, replace it with flat-leaf parsley or chives.
  • Swap red curry paste for yellow if you prefer a milder, more delicate flavour.
  • For a coconut-free version, use 18% cooking cream and a bit more stock.

Ingredients

  • pumpkin (e.g. hokkaido or butternut) - 700 g
  • red lentils - 120 g
  • coconut milk kokosowe z puszki - 400 ml
  • vegetable stock - 600 ml
  • onion - 1 piece
  • garlic - 2 clove
  • red curry paste - 1.5 tablespoon
  • fresh ginger - 15 g
  • oil roślinny - 2 tablespoon
  • lime juice - 1.5 tablespoon
  • salt
  • fresh coriander or parsley - 2 tablespoon
  • toasted pumpkin seeds or peanuts - 2 tablespoon

Preparation

  1. Peel and dice the onion. Finely chop the garlic and grate the ginger on a fine grater. Peel the pumpkin (if using hokkaido, you can leave the skin on), remove the seeds and cut into approx. 2 cm cubes. Rinse the red lentils in a sieve until the water runs clear.
  2. If you have time, spread the pumpkin on a baking tray, drizzle with oil and roast for 20 minutes at 200°C, until the edges are lightly browned. The pieces should be soft and smell slightly caramelised; you can also add the pumpkin raw without roasting.
  3. Heat the oil in a large pot over medium heat. Add the onion and fry for 4–5 minutes, stirring, until it softens, becomes translucent and smells slightly sweet, but without any browned edges.
  4. Add the garlic, ginger and red curry paste. Fry for 1–2 minutes, stirring constantly, until the spices become very fragrant and start to lightly stick to the bottom, but do not brown.
  5. Add the pumpkin (raw or roasted) and the rinsed lentils. Stir so they are coated with the spices and sauté for 1–2 minutes, until the pumpkin pieces look glossy from the fat.
  6. Pour in the stock, stir and bring to a boil. Reduce the heat, cover the pot and cook for 20–25 minutes, until the pumpkin is very soft and the lentils start to fall apart under gentle pressure from a spoon, naturally thickening the soup.
  7. Pour in the coconut milk and stir thoroughly. Cook for another 3–5 minutes on low heat, until the soup is smooth and very creamy, but do not let it come to a rolling boil so the milk doesn’t split.
  8. Remove the pot from the heat and blend the soup with a hand blender until completely smooth. If it’s too thick (the spoon stands up), add a little water or stock and blend again until it’s silky and pourable but still substantial.
  9. Season with salt and lime juice. Start with half the juice, taste, and add the rest if needed, until the flavour becomes distinctly fresh, slightly tangy and well balanced with the heat of the curry.
  10. Serve the soup very hot, topped with chopped coriander or flat-leaf parsley and toasted pumpkin seeds or peanuts for crunch against the smooth cream.

In winter I cook a big pot of this soup on Sunday, pour it into jars and simply reheat it after work for the next few days. I like it best wrapped in a blanket, with the bowl on my lap and a series playing in the background.
