Ingredients
- long greenhouse cucumber - 1 piece
- carrot - 0.5 piece
- onion czerwona mała - 0.5 piece
- unsalted peanuts - 3 tablespoon
- lime juice - 2.5 tablespoon
- sugar trzcinowy lub biały - 1.5 teaspoon
- sauce rybny lub sojowy - 1.5 tablespoon
- fresh chili pepper - 0.5 piece
- fresh coriander or parsley - 2 tablespoon

Preparation
- Wash the cucumber, cut it in half lengthwise and scoop out the soft, seedy centre with a teaspoon. Slice the rest into thin half-slices. Coarsely grate the carrot or cut it into thin sticks. Slice the onion into very thin feathers.
- In a bowl, mix the lime juice, sugar, fish or soy sauce and chopped chili. Stir until the sugar dissolves.
- Add the cucumber, carrot and onion to the bowl. Gently toss with your hands or a spoon so the vegetables are coated in the dressing.
- Finally, add the chopped peanuts and fresh coriander or parsley. Gently mix.
- Let the salad stand for 5–10 minutes so the vegetables soften slightly and absorb the flavour of the dressing. Serve right away as a side to a main dish or as a light snack.
