Sweet potato fries – baked sweet potato fries with yogurt dip Recipe

Sweet potato fries are a sweeter version of fries made from sweet potatoes, baked in the oven with spices until soft in the middle and lightly browned on the edges. In many American burger joints you can order them instead of regular fries, as they’re more aromatic and have a gently sweet flavour. At home they’re perfect as an oven-baked snack or a side dish, especially with a simple yogurt dip.

Ingredients

  • sweet potatoes - 800 g
  • rapeseed oil - 30 ml
  • potato starch - 20 g
  • sweet paprika, ground - 4 g
  • garlic powder - 2 g
  • salt - 4 g
  • black pepper ground - 1 g
  • Greek yogurt - 150 g
  • lemon juice - 10 ml
  • honey - 5 g
  • dill chopped - 5 g

Preparation

  1. Preheat the oven to 220°C (top and bottom heat) and line a large baking tray with baking paper.
  2. Peel the sweet potatoes and cut them into sticks about 1 cm thick. Try to keep them a similar size so they bake evenly.
  3. Rinse the cut sweet potatoes in cold water, then dry them very thoroughly with paper towels – this is important so the fries bake rather than steam.
  4. In a large bowl, mix the potato starch, paprika, garlic powder, salt and pepper. Add the sweet potatoes and toss until each piece is lightly coated in the powder.
  5. Pour in the oil and toss again so the spices and starch stick to the sweet potatoes.
  6. Spread the fries out on the tray in a single layer, making sure they don’t touch – if needed, use two trays.
  7. Bake for 15 minutes, then remove the tray, gently turn the fries over and bake for another 10–15 minutes, until the edges are well browned and the centres are soft.
  8. Meanwhile, make the dip: in a bowl, mix the yogurt with the lemon juice, honey and chopped dill. Taste and season with a pinch of salt if needed.
  9. Serve the baked fries immediately, hot, with a bowl of yogurt dip for dunking.

Leftover fries can be reheated briefly in a hot oven to restore some crispness, but they’re best eaten fresh. Keep the yogurt dip chilled and covered, and stir before serving again.
