Roasted carrot salad with feta and pumpkin seeds Recipe
This roasted carrot salad is inspired by Middle Eastern flavours, with feta, pumpkin seeds and a honey–lemon dressing. The sweetness of caramelised carrots combines with the saltiness of the cheese, the crunch of the seeds and the freshness of parsley. From a few basic ingredients you get a dish that can proudly take centre stage on the table.
The sweet–salty combination of roasted carrots with tangy dressing and salty cheese refers to Mediterranean and Middle Eastern cuisines, where vegetables often play the main role. It’s a good way to bring these flavours into everyday Polish menus.
It turns ordinary carrots from the bottom of the fridge drawer into a dish that can easily compete with meat sides on the table. It pairs beautifully with both roasted meats and simple grain dishes. On a platter it looks colourful and abundant, even though the ingredient list is short.

Watch out for
- Don’t cut the carrots too thinly – they will dry out quickly and become stringy instead of soft inside.
- Watch the pumpkin seeds closely in the pan, as they can go from lightly golden to burnt in seconds.
- Don’t over-salt at the beginning, because feta adds a lot of salt and it’s easy to end up with an overly salty salad.
Substitutions
- You can replace feta with Balkan-style cheese or well-drained semi-fat cottage cheese.
- Swap the honey for maple or date syrup if you avoid bee products.
- Replace pumpkin seeds with sunflower seeds or chopped walnuts.
Ingredients
- carrots - 600 g
- cheese feta - 120 g
- pumpkin seeds - 3 tablespoons
- oil rapeseed or olive - 3 tablespoons
- honey - 1 tablespoon
- lemon juice - 1.5 tablespoons
- garlic - 1 clove
- parsley flat-leaf or curly - 3 tablespoons
- salt
- pepper ground black
Preparation
- Preheat the oven to 200°C (top and bottom heat). Line a baking tray with baking paper so the carrots don’t stick and can be easily transferred to a bowl or serving platter later.
- Peel the carrots and cut them into long batons or thick, evenly sized slices. The pieces should be of similar thickness so they roast evenly and are soft inside.
- Place the carrots on the tray, drizzle with 1.5 tablespoons of oil, lightly salt and mix thoroughly with your hands. Each piece should be thinly coated in fat and glossy, with no dry spots.
- Spread the carrots out in a single layer without big piles so they can roast rather than steam. Bake for 25–30 minutes, stirring gently halfway through; the edges should be clearly browned.
- The carrots are ready when they yield easily to a fork and some pieces have caramelised, slightly darker edges. Remove the tray and let the vegetables cool slightly so they’re not piping hot.
- In a small bowl mix the remaining oil, honey, lemon juice, grated garlic, a pinch of salt and pepper. The dressing should have a distinctly sweet–sour flavour with a gentle garlic heat.
- Toast the pumpkin seeds in a dry pan over medium heat for 3–4 minutes, stirring often. They’re ready when they smell nutty, turn lightly golden and start to pop gently.
- Transfer the roasted carrots to a bowl or serving platter, drizzle with the dressing and gently toss until the pieces are glossy but don’t fall apart. Leave for a few minutes so they absorb some of the dressing.
- Crumble the feta with your fingers into irregular pieces and sprinkle over the carrots, trying not to mash it into a paste but leaving distinct chunks.
- Scatter the toasted pumpkin seeds and finely chopped parsley on top. If needed, season with freshly ground pepper and a little salt if the feta is mild, and serve slightly warm or at room temperature.
Storage
Store the salad in the fridge in an airtight container for up to 2 days – the carrots will soften over time and the feta will break down slightly. Take it out 15–20 minutes before serving so it comes to room temperature; do not freeze, as the vegetables will become watery.
I most often make this salad when the fridge is full of carrots from the weekly shop – I roast a whole tray at once and some of it goes into lunchboxes with grains. On the holiday table I serve it next to heavier mayonnaise-based salads and it usually disappears first.
