German Quark Dessert with Raspberries Recipe
This light dessert with quark and raspberries is the German answer to our chilled cream cheese desserts – simple but very satisfying. In Germany, quark is often served sweet with fruit as a dessert after lunch or a light supper. It tastes like a cross between a no-bake cheesecake and fruit yogurt, only with a more pronounced dairy character.
A classic German-style quark dessert that’s quick to make, refreshing, and lighter than many cream-based sweets. The combination of tangy quark, juicy raspberries, and crunchy almonds gives a satisfying contrast of textures and flavors.

Don’t over-blend the quark mixture; mix just until smooth so it stays airy and not runny. If your raspberries are very tart, sweeten them lightly with a bit of sugar or honey before layering.

Serve this dessert in small glasses for an everyday treat, or in elegant stemmed glasses for guests. It’s perfect after a heavier meal when you still want something sweet but not too rich.
Ingredients
- quark - 400 g
- yogurt natural - 150 g
- raspberries fresh or frozen - 200 g
- sugar - 40 g
- vanilla sugar - 8 g
- lemon zest finely grated - 1 teaspoon
- flaked almonds - 20 g
Preparation
- Rinse the raspberries gently in a sieve and pat dry with paper towels. If using frozen raspberries, thaw them first and drain off any excess juice.
- Place the quark in a bowl and add the yogurt, sugar, vanilla sugar, and grated lemon zest.
- Briefly blend with a hand blender or whisk vigorously until the mixture is smooth and creamy with no lumps.
- Taste and add more sugar or some honey if you prefer a sweeter dessert.
- Place the flaked almonds in a dry pan and toast over medium heat for 2–3 minutes, stirring often, until lightly golden and fragrant. Set aside to cool.
- Spoon a layer of the quark mixture into glasses or dessert bowls, then add a layer of raspberries, and top with another layer of the quark mixture.
- Sprinkle the top with the toasted flaked almonds and a few raspberries.
- Serve immediately or chill in the fridge for 30 minutes if you like your desserts very cold.
Storage
Store the quark mixture in an airtight container in the fridge for up to 2 days. Add fresh fruit and toasted almonds just before serving so they stay firm and crunchy.
