Korean dessert with yogurt, rice and fruit Recipe

Layered dessert in a glass: at the bottom sweet, sticky rice, on top creamy yogurt, and fresh fruit with sesame seeds as a finishing touch. In Korea, traditional ingredients like rice are increasingly combined with modern desserts inspired by Western cuisine – this dessert is exactly such a bridge between a bowl of rice and a yogurt parfait. The taste is a bit like rice pudding served “cold” with fruit.

Ingredients

  • short-grain rice e.g. for sushi or risotto - 120 g
  • water - 250 ml
  • milk cow’s or plant-based - 200 ml
  • sugar for the rice - 2 tablespoons
  • plain yogurt thick, e.g. Greek-style - 400 g
  • honey for the yogurt - 1.5 tablespoon
  • strawberries fresh or thawed frozen - 150 g
  • kiwi ripe - 2 pieces
  • banana medium - 1 piece
  • sesame seeds toasted in a dry pan - 1 tablespoon
  • vanilla extract optional - 0.5 teaspoons
  • pinch of salt for the rice - 1 pinch

Preparation

  1. Rinse the rice several times in cold water until the water is almost clear. Drain in a sieve.
  2. Put the rice into a pot, add the water and a pinch of salt. Bring to a boil, reduce the heat to low, cover and cook for 10 minutes.
  3. After 10 minutes add the milk and sugar. Cook over low heat for another 10–15 minutes, stirring often, until the rice is soft and the liquid has thickened and become creamy. If the mixture is too thick, add a little more milk.
  4. Remove the pot from the heat and leave the rice to cool. It should be lukewarm or completely cold before assembling the dessert.
  5. In a bowl, mix the yogurt with the honey and vanilla extract, if using.
  6. Cut the strawberries into quarters, peel the kiwi and dice it, and slice the banana.
  7. Prepare 4 glasses or dessert cups. Put 2–3 tablespoons of sweet rice at the bottom of each and press it down lightly with a spoon.
  8. Spoon 2–3 tablespoons of yogurt over the rice layer. Arrange a mix of fruit on top.
  9. Sprinkle the dessert with toasted sesame seeds and place in the fridge for at least 20 minutes to chill and set slightly. Serve chilled.

Deser przechowuj w lodówce, najlepiej przykryty folią spożywczą. Owoce mogą lekko puścić sok, ale smak nadal będzie dobry; najlepiej zjeść w ciągu 1–2 dni.
