Korean Street Sandwiches with Omelet – Gilgeori Toast Recipe

Gilgeori toast is a popular Korean street sandwich with an egg “pancake”, vegetables, and a sweet-salty sauce. Chef's tips

Shape the omelet into as neat a rectangle as you can – it will fit the bread better and be easier to eat. Don’t skip the sugar on the bread: that light caramelized layer is one of the signatures of gilgeori toast. If your pan is small, fry the omelet in two batches instead of making one very thick one.

How to serve

Serve immediately after assembling, while the bread is still crisp and the omelet warm. It’s ideal as a grab-and-go breakfast or a quick lunch. Pair with iced coffee, milk tea, or a lightly sweetened black tea to echo the Korean street food experience.

Ingredients

  • toast bread preferably thicker slices - 4 slice
  • egg - 3 piece
  • white cabbage finely chopped or grated - 60 g
  • carrot grated on a coarse grater - 0.5 piece
  • chives chopped - 2 tablespoon
  • sugar for sprinkling the bread - 1 teaspoon
  • butter for frying the bread and omelet - 20 g
  • salt for the eggs - 0.25 teaspoon
  • black pepper for the eggs - 0.25 teaspoon
  • ketchup - 2 tablespoon
  • mayonnaise - 2 tablespoon
  • yellow cheese optional - 2 slices

Preparation

  1. Finely chop or grate the cabbage, grate the carrot on a coarse grater, and chop the chives. Transfer the vegetables to a bowl.
  2. Crack the eggs into the vegetables, add salt and pepper. Mix with a fork until the mixture is uniform and the vegetables are well coated with egg.
  3. Heat half of the butter in a large frying pan over medium heat. Pour in the egg and vegetable mixture and spread it evenly, forming a rectangle roughly the size of two slices of bread. Fry for 3–4 minutes, until the bottom sets and is lightly browned.
  4. Carefully flip the omelet to the other side using a wide spatula. Fry for another 2–3 minutes, until the eggs are fully set. Transfer the omelet to a board and cut it into two rectangles.
  5. In the same pan, melt the remaining butter. Place the bread slices in the pan and fry for 1–2 minutes on each side, until golden and crispy. When you flip the slices to the other side, lightly sprinkle one side of each slice with a pinch of sugar – the sugar will caramelize slightly.
  6. In a small bowl, mix the ketchup with the mayonnaise to make a pink sauce.
  7. Place one slice of cheese (if using) on two slices of bread, then top with the warm omelet. Drizzle each portion with 1 tablespoon of the ketchup-mayonnaise sauce.
  8. Cover with the second slice of bread (sugared side facing in), press gently with your hand, and cut the sandwiches in half if you like. Serve immediately, while hot.
