Korean toast with egg, cheese and chives Recipe

These crispy toasts made from bread baked with egg, cheese and chives are like a cross between scrambled-egg toast and mini casseroles. In Korea, different variations of toast and grilled bread are popular as a quick breakfast or an evening snack in front of the TV. The flavor is simple and very comforting – egg, cheese and crunchy bread are a trio that’s hard to beat.

This recipe turns simple ingredients into a Korean-style comfort snack that’s perfect for breakfast or a late-night bite. The egg mixture soaks slightly into the bread while baking, giving you a soft, custardy center with a crispy, golden edge.

Korean toast with egg, cheese and chives

Chef's tips

Use day-old bread if you can – it holds its shape better and crisps up more nicely in the oven. Don’t overload the slices with too much topping, otherwise the center may stay runny while the edges are already browned.

How to serve

Serve the toasts straight from the oven with a side of kimchi for a more Korean twist, or pair them with a simple green salad for a light meal. They’re also great cut into smaller pieces and served as a warm party snack.

Ingredients

  • toast bread - 4 slice
  • egg - 3 piece
  • yellow cheese grated - 60 g
  • milk - 2 tablespoon
  • chives finely chopped - 2 tablespoon
  • butter softened - 1 tablespoon
  • salt - 0.25 teaspoon
  • black pepper freshly ground - 0.25 teaspoon
Main Ingredient: egg

Preparation

  1. Preheat the oven to 190°C (top and bottom heat). Line a baking tray with baking paper.
  2. Lightly spread one side of each slice of bread with a thin layer of butter and place on the tray, buttered side up.
  3. In a bowl, beat the eggs with the milk, salt and pepper until the mixture is smooth.
  4. Finely chop the chives and add to the eggs. Add the grated cheese and mix everything together.
  5. Spoon the egg-and-cheese mixture onto each slice of bread, spreading it evenly right to the edges.
  6. Place the tray in the preheated oven and bake for 12–15 minutes, until the egg mixture is set and the cheese is lightly golden. The edges of the bread should be crispy and golden.
  7. After removing from the oven, wait 2–3 minutes for the topping to firm up slightly, then serve the toasts warm.

These toasts are ideal for busy mornings: you can mix the egg and cheese in advance and just assemble and bake when you’re ready to eat. They’re also a good way to use up leftover bread and bits of cheese from the fridge.
