Korean Chilled Dessert with Milk, Honey and Sesame Recipe

A simple, chilled dessert made from milk, honey and toasted sesame that tastes like a slightly thinned pudding with a nutty note. In Korea, sesame drinks and desserts are popular as something between a snack and a small meal, especially on hot days. This dessert is light, gently sweet and pleasantly scented with toasted sesame.

This dessert combines the comforting creaminess of a light pudding with the deep, nutty aroma of toasted sesame, inspired by traditional Korean sesame drinks and sweets enjoyed on hot days.

Korean Chilled Dessert with Milk, Honey and Sesame

Chef's tips

Toast the sesame seeds just until golden and fragrant, not dark brown, to avoid bitterness. Whisk constantly when adding the starch mixture so the dessert stays silky and lump-free.

How to serve

Serve in small glass cups or bowls, topped with extra toasted sesame seeds. For a more refreshing version on very hot days, add a few ice cubes or serve alongside fresh fruit like sliced banana or strawberries.

Ingredients

  • milk - 500 ml
  • honey - 2.5 tablespoon
  • sesame seeds toasted - 3 tablespoon
  • potato starch - 1.5 tablespoon
  • salt - 1 pinch
  • vanilla - 0.5 teaspoon
Main Ingredient: milk

Preparation

  1. Toast the sesame seeds in a dry pan over medium heat for 2–3 minutes, stirring often, until they lightly brown and become very fragrant. Set aside to cool.
  2. In a small bowl, mix the potato starch with 4 tablespoons of cold milk until there are no lumps.
  3. Pour the remaining milk into a saucepan, add a pinch of salt and heat over medium heat until hot but not yet boiling.
  4. Add the milk-and-starch mixture to the saucepan, whisking constantly. Cook for 1–2 minutes over low heat until the milk thickens slightly – it should have the consistency of a thin pudding.
  5. Remove the saucepan from the heat, add the honey, vanilla and 2 tablespoons of the toasted sesame seeds. Mix thoroughly.
  6. Pour the dessert into small glasses or bowls. Let it cool to room temperature, then refrigerate for at least 1 hour until well chilled.
  7. Before serving, sprinkle the top with the remaining toasted sesame seeds. Serve well chilled.
