German Quark and Ladyfinger Dessert with Fruit Recipe

Ingredients

  • quark - 250 g
  • cream - 150 ml
  • icing sugar - 3 tablespoons
  • vanillin sugar - 1 teaspoon
  • ladyfingers - 100 g
  • berry fruit - 250 g
  • fruit juice - 80 ml
  • lemon - 0.5 pieces
  • mint - 4 leaves

Preparation

  1. If using frozen fruit, take it out of the freezer in advance and let it thaw slightly. Rinse and dry fresh fruit, and cut larger pieces (such as strawberries) into chunks.
  2. Place the quark in a bowl and mash with a fork or blend until smooth. Add the icing sugar, vanillin sugar and the juice from half a lemon, then mix.
  3. In a separate bowl whip the cream to a fluffy but still soft consistency – when you lift the whisk it should form soft peaks.
  4. Gently fold the whipped cream into the quark, mixing with a spoon from bottom to top so the mixture stays light and airy.
  5. Crush the ladyfingers into smaller pieces (not into powder – you want small chunks to remain).
  6. If you like a more refreshing taste, you can add 1 teaspoon of lemon juice to the fruit juice.
  7. Place a layer of crushed ladyfingers at the bottom of dessert glasses and drizzle with fruit juice (about 1–2 tablespoons per serving).
  8. Spoon a layer of quark cream over the ladyfingers, then add a layer of fruit. Repeat the layers, finishing with cream and a few pieces of fruit on top.
  9. You can serve the dessert immediately or chill it in the fridge for 30–60 minutes so the ladyfingers soften slightly. Before serving, decorate with mint leaves.

Keep the dessert covered in the fridge and eat within 1–2 days. Over time the ladyfingers will soften more and the cream may release a little liquid, but the dessert will still taste good.
