Affogato al caffè – vanilla ice cream drowned in espresso Recipe

Affogato al caffè is one of the simplest Italian desserts: a scoop of vanilla ice cream “drowned” in hot espresso. In Italy it’s often ordered after lunch instead of having coffee and dessert separately – two in one. Perfect when you want to make an impressive dessert in 2 minutes without baking or blending.

In Italy, affogato appears on bar and gelateria menus as something between a dessert and an afternoon coffee. It’s often ordered after lunch instead of classic tiramisù, precisely for that contrast between hot espresso and cold ice cream.

Affogato al caffè combines two classics – espresso and ice cream – in one elegant, ultra-quick dessert. It looks impressive, requires virtually no preparation, and delivers a perfect balance of hot and cold, bitter and sweet.

Why this version works

  • Chilled dessert glasses slow down the melting of the ice cream and extend the short “perfect moment” of the dessert.
  • Freshly brewed, hot espresso gives a strong contrast to the cold ice cream and smells intensely.
  • Adding the liqueur directly onto the ice cream, before the coffee, gives an even, gentle aroma of alcohol.

Chef's tips

Use the best vanilla ice cream you can find – with real vanilla and a high cream content – because the recipe has so few ingredients and the flavor of the ice cream really stands out. Brew a strong, aromatic espresso; weak coffee will make the dessert watery and flat in taste.

How to serve

Serve immediately after pouring the espresso, with small dessert spoons. It pairs wonderfully with almond cookies or biscotti on the side. For a dinner party, prepare the glasses with ice cream in advance and keep them in the freezer, then just add liqueur and hot espresso in front of your guests.

Watch out for

  • Don’t pour the coffee in advance – after 2–3 minutes the ice cream will completely melt and the contrast in textures will disappear.
  • Avoid very sweet ice cream and sweetening the coffee at the same time, or the dessert will become cloying.
  • Don’t use cold or reheated coffee – the affogato will lose the temperature contrast and part of its aroma.

Substitutions

  • Instead of espresso, use very strong coffee from a moka pot or Aeropress in a similar volume.
  • You can replace vanilla ice cream with cream, caramel, or lactose-free vanilla ice cream.
  • For a decaffeinated version, choose good decaf espresso, keeping the same amount of coffee.
  • For a non-alcoholic version, simply skip the liqueur – the contrast between coffee and ice cream will still be clear.

Ingredients

  • good-quality vanilla ice cream about 200 g - 4 scoops
  • freshly brewed espresso about 50–60 ml total - 2 shots
  • sugar (optional, to sweeten the coffee)
  • unsweetened cocoa powder or grated dark chocolate (optional, for sprinkling) - 1 teaspoon
  • amaretto or nut liqueur (optional, for adults) - 20 ml
Main Ingredient: vanilla ice cream

Preparation

  1. Prepare 2 small glasses or dessert cups and, if you have time, place them in the fridge for 10 minutes or in the freezer for 5 minutes – the chilled glass will noticeably slow down the melting of the ice cream.
  2. Put 2 scoops of good vanilla ice cream into each glass. If the ice cream is very hard, take the tub out of the freezer 5 minutes earlier so it softens slightly and is easier to shape into even scoops.
  3. Brew 2 small, strong espressos – one per serving. The coffee should be hot, freshly ground, and fragrant, without a burnt bitterness; if you want a sweeter dessert, lightly sweeten it and stir well.
  4. Take the glasses with ice cream out of the fridge or freezer. If you use liqueur, drizzle it over the ice cream (about 10 ml per serving) so it runs down the sides of the scoops and lightly soaks into their surface.
  5. Just before serving, slowly pour the hot espresso over the ice cream, ideally along the side of the glass so you don’t break up the whole scoop at once. The top of the ice cream should melt slightly, forming a creamy coating and a coffee “pool” at the bottom.
  6. Serve immediately, optionally sprinkling the top with a little unsweetened cocoa powder or grated dark chocolate. Eat with a teaspoon, scooping up pieces of ice cream together with the liquid coffee sauce before everything fully melts.

Affogato is my go-to dessert when I don’t have time or energy to bake, but still want something that feels special. With good ice cream and freshly brewed espresso, it always tastes like a treat straight from an Italian café.
