Ingredients
- zucchini - 2 pieces
- egg - 1 piece
- flour pszenna - 4 tablespoons
- garlic - 2 cloves
- chives or spring onion - 3 tablespoons
- soy sauce sojowy - 1 tablespoon
- oil roślinny - 4 tablespoons
- lime juice - 2 tablespoons
- fish sauce or soy sauce rybny lub sojowy - 1.5 tablespoons
- sugar trzcinowy - 1 tablespoon
- red chili pepper - 1 piece
- water - 2 tablespoons
- salt
- black pepper
Main Ingredient:
zucchini
Preparation
- Grate the zucchini on the large holes of a box grater. Transfer to a sieve, sprinkle with a pinch of salt and set aside for 10 minutes to release excess water.
- After 10 minutes, squeeze the zucchini very well with your hands or in a clean kitchen towel – the less water, the crispier the fritters will be.
- In a bowl, mix the squeezed zucchini, egg, flour, garlic, chives, soy sauce and pepper. The batter should be thick but spoonable. If it is too runny, add 1 more tablespoon of flour.
- In a small bowl, make the sauce: mix the lime juice, fish sauce or soy sauce, sugar, water and chopped chili until the sugar dissolves.
- Heat 2 tablespoons of oil in a frying pan over medium heat. Drop spoonfuls of batter into the pan, forming small palm-sized fritters and gently flattening them.
- Fry the fritters for 3–4 minutes on one side, until the bottom is golden and crispy. Carefully flip and fry for another 2–3 minutes. Add the remaining oil for the next batches if needed.
- Transfer the fried fritters to a plate lined with paper towel to drain excess oil.
- Serve the hot fritters with a small bowl of chili-lime sauce for dipping.
