Thai Coconut-Pineapple Drink with Lime Recipe
This coconut-pineapple drink with lime is a tropical refreshment inspired by Thai street juice stalls. In the Thai heat, chilled drinks like this are lifesavers – sweet, slightly tangy, and very coconutty. At home it’s perfect as a non-alcoholic party drink or a dessert to sip on the balcony.

Ingredients
- pineapple, fresh or canned - 300 g
- coconut milk kokosowe z kartonu lub lekko rozcieńczone z puszki - 250 ml
- water or sparkling water - 200 ml
- lime juice - 2 tablespoons
- sugar trzcinowy lub syrop klonowy - 1.5 tablespoons
- ice cubes
- mint leaves - 6 pieces
- lime slices - 3 pieces

Preparation
- Place the pineapple pieces, coconut milk, water, lime juice, and sugar or syrup in a blender jug. Add a few ice cubes if you want the drink very cold right away.
- Blend for 30–60 seconds until the drink is smooth and slightly frothy. If you prefer a thinner consistency, add a little more water.
- Taste and, if needed, add more lime juice (for more acidity) or sugar (for more sweetness). Blend briefly again.
- Put a few ice cubes into each glass. Pour in the coconut-pineapple drink.
- Garnish each glass with a slice of lime and mint leaves. Serve immediately, well chilled.
