Spanish Baked Pineapple Dessert with Honey and Almonds Recipe

Ingredients
- fresh pineapple peeled, cut into slices or half-slices - 1 piece
- honey runny - 2 tablespoons
- olive oil preferably mild - 1 tablespoon
- flaked almonds lightly crushed - 30 g
- ground cinnamon for sprinkling - 0.5 teaspoons
- lemon juice for drizzling over the pineapple - 1 tablespoon
- Greek yogurt for serving, optional - 200 g
Preparation
- Preheat the oven to 200°C. Line a baking tray with baking paper.
- Arrange the pineapple slices on the tray in a single layer. Drizzle with lemon juice.
- In a small bowl, mix the honey with the olive oil until you get a smooth, runny mixture.
- Brush the pineapple with the honey and olive oil mixture using a spoon or pastry brush.
- Sprinkle the pineapple slices with cinnamon.
- Place the tray in the oven and bake for 15–20 minutes, until the edges of the pineapple are lightly browned and caramelized spots appear on the surface.
- For the last 5 minutes of baking, sprinkle the pineapple with flaked almonds so they toast lightly but do not burn.
- Serve the pineapple warm, with a spoonful of Greek yogurt on the side or on top, if using.
