Smoked salmon and quark sandwich spread Recipe

Smoked salmon and quark spread is a Polish answer to Scandinavian fish spreads, made lighter thanks to a base of quark. It has a pronounced smoky salmon flavor, lemony freshness and a creamy but not heavy texture. It works well for a quick breakfast, in a lunchbox and as an elegant appetizer on toast.

This is a homemade version of popular smoked fish spreads that in Scandinavia are served on bread and crackers, but here the base is Polish quark instead of heavy cream cheese.

Instead of a heavy, buttery spread you get a light, protein-rich quark-based spread that still has a distinct smoked fish character., Lemon and fresh herbs cut through the richness of the salmon, so the spread tastes fresh even on dark, wholegrain bread.

How to serve

Serve on rye bread, graham rolls, crispbread or as a dip for cucumber sticks, celery sticks and radishes., For a party, spoon the spread onto small toasts and garnish with a strip of cucumber or a slice of lemon; it also pairs well with bagels or mini rolls for brunch.

Watch out for

  • Don’t add too much salt at once – smoked salmon can be very salty and it’s easy to overdo it.
  • Herbs that are too wet will thin the spread, and after chilling a watery layer may separate.

Substitutions

  • You can replace natural yogurt with thick 18% sour cream for a richer, creamier spread.
  • Instead of semi-fat quark, use creamy quark or well-drained cottage cheese.
  • Dill can be swapped for finely chopped parsley if someone doesn’t like dill.

Ingredients

  • cold-smoked salmon - 120 g
  • semi-fat quark - 200 g
  • yogurt thick natural - 2 tablespoons
  • lemon juice freshly squeezed - 1 tablespoon
  • fresh dill - 0.5 bunch
  • chives optional - 0.25 bunch
  • black pepper ground
  • salt

Preparation

  1. Clean the smoked salmon of any bones and skin. Cut into small cubes or thin strips – the pieces should be small but noticeable when you bite into them.
  2. Transfer the quark to a bowl and mash thoroughly with a fork until any larger lumps disappear. Add the yogurt and lemon juice and mix into the smoothest, creamiest mass possible, without dry, chalky bits of cheese.
  3. Rinse the dill and chives in cold water, dry thoroughly on paper towels and chop finely. The herbs should feel dry to the touch so they don’t water down the spread.
  4. Add the chopped salmon, dill and chives to the bowl with the quark. Gently mix with a spoon so that the pieces of fish stay intact and the mixture is evenly flecked with green herbs.
  5. Season the spread with freshly ground black pepper and taste. If needed, add a pinch of salt – the flavor should be pronounced but not as salty as smoked fish on its own.
  6. If the spread seems too thick and dry, add yogurt a teaspoon at a time until a spoon passes through it with slight resistance, without crumbling. The mixture should spread easily but hold its shape on bread.
  7. Place the bowl with the spread in the fridge for at least 20–30 minutes so the flavors meld. Serve well chilled, when the spread is thick, doesn’t release liquid and doesn’t slide off the bread.

Store the spread in an airtight container in the fridge for up to 2 days – over time the herbs will fade and the salmon flavor will become stronger. Always stir before serving and mix any liquid back in until the texture is creamy again.
