  • eggs - 5 pieces

  • onion - 1 piece
  • butter - 1 tablespoon
  • milk - 2 tablespoons
  • salt
  • pepper black, ground
  • chives - 0.25 bunch

Preparation

  1. Peel the onion and dice it finely. Cut the bacon into strips or small rectangles so it renders easily and browns at the edges.
  2. Heat the butter in a frying pan over medium heat until it foams lightly and smells nutty. Add the onion and fry for 3–4 minutes until soft, translucent and lightly golden in spots, but not brown.
  3. Add the bacon to the onion. Fry for 4–6 minutes until the fat renders and the pieces are golden and crisp at the edges, stirring from time to time. If a lot of fat collects in the pan, carefully pour off 1 tablespoon.
  4. In a bowl, crack the eggs, add the milk, a little pepper and a pinch of salt. Beat with a fork or whisk until the mixture is evenly pale yellow, with no streaks of white and slightly foamy.
  5. Reduce the heat under the pan to medium-low. Spread the bacon and onion evenly over the bottom and wait 10–15 seconds until the sizzling calms down a bit – the fat should be hot but not spitting.
  6. Pour in the egg mixture. Wait 10–15 seconds until the edges start to set and turn matte, then gently push the eggs from the edges towards the centre with a spatula, forming soft folds.
  7. Cook for 3–4 minutes over low or medium-low heat, moving the mixture every so often. The eggs should thicken gradually without sudden, dry curds; in the thickest part they can still be slightly runny.
  8. Remove the pan from the heat when the eggs are set but still moist and glossy. Leave for 20–30 seconds to finish cooking in the residual heat, season with salt and pepper to taste, sprinkle with chopped chives and serve immediately with bread.

Scrambled eggs continue to cook even off the heat and become firmer after a few minutes on the plate. Store leftovers in the fridge for up to 1 day and reheat briefly over low heat with a little butter, just until warmed through, not fully set.
