Roasted Cauliflower Salad with Egg and Dill Recipe

Roasted cauliflower salad with egg and dill is a Polish twist on egg salad, where potatoes are replaced with golden-roasted cauliflower. Nutty cauliflower, pickled cucumbers, eggs and plenty of dill create a bold but lighter combination than the classic all-mayonnaise version. Thanks to roasting the vegetables, the salad has a deeper flavor and holds its structure better, so it stores and travels very well.

This is a modern interpretation of Polish egg salad, fitting into the trend of replacing potatoes with lower-calorie vegetables. Roasted cauliflower is an increasingly common ingredient in salads served at home barbecues and parties.

This salad tastes familiar, like Polish vegetable or egg salad, but thanks to roasted cauliflower it’s lighter and more flavorful. It works well both at a barbecue next to sausages and as a standalone lunch with a slice of bread. It travels well in a lunchbox, so it’s easy to take to work.

Roast the cauliflower until the edges are clearly browned – pale florets will be watery and make the salad bland. Don’t rush the mixing: if the eggs or cauliflower are still warm enough to burn your fingers, wait a few minutes, otherwise the dressing will become runny. If the cucumbers are very salty, season with salt only after chilling, as the flavor intensifies after an hour in the fridge.

How to serve

Serve the salad well chilled with a slice of wholemeal bread, sourdough rye or a crusty baguette. It pairs perfectly with grilled sausages, pork neck or roast chicken, but also as a standalone lunch with some salad leaves. For a picnic, pack it into jars and sprinkle with fresh dill just before eating.

Watch out for

  • Don’t put wet cauliflower into the oven – it will start to steam and stay pale, without crispy edges.
  • Don’t mix the salad while the cauliflower or eggs are hot, as the dressing will thin out and run to the bottom of the bowl.
  • Be careful with salt – taste first, as pickled cucumbers, mayonnaise and mustard also add saltiness.

Substitutions

  • You can replace natural yogurt with 12–18% sour cream for a richer, more “creamy” flavor.
  • Swap red onion for spring onion or just chives if you prefer a milder, less pungent aroma.
  • You can replace part of the mayonnaise with extra yogurt if you want a lighter dressing.

Ingredients

  • cauliflower - 1 piece
  • eggs - 4 pieces
  • oil rapeseed - 3 tablespoons
  • fresh dill - 3 tablespoons
  • pickled cucumber - 3 pieces
  • onion red - 0.5 pieces
  • mayonnaise - 3 tablespoons
  • yogurt thick natural - 3 tablespoons
  • mustard - 1 teaspoon
  • salt
  • black pepper ground
  • lemon juice - 1 tablespoon

Preparation

  1. Preheat the oven to 200°C (top–bottom heat) and line a baking tray with baking paper. Divide the cauliflower into small, even florets, rinse thoroughly and dry very well with a towel – there should be no visible droplets.
  2. Transfer the florets to the tray, drizzle with oil, lightly salt and mix thoroughly with your hands until all pieces are thinly and evenly coated and lightly glossy. Spread in a single layer without overlapping pieces.
  3. Roast for 25–30 minutes, stirring every 10 minutes. The cauliflower should be tender inside when pierced with a fork, with clearly golden edges and some lightly charred spots – avoid pale, watery florets.
  4. Meanwhile, place the eggs in a saucepan, cover with cold water, bring to a boil and cook for 8–9 minutes from the moment of boiling. Immediately cover with cold water and leave to cool completely – the shells should peel off in large pieces.
  5. Dice the pickled cucumbers finely. Peel the onion and chop very finely so it doesn’t dominate the flavor. Rinse the dill, dry well and chop so it’s fluffy rather than clumped into wet lumps.
  6. In a bowl, mix the mayonnaise, yogurt, mustard and lemon juice into a smooth dressing. Season with salt and pepper – the dressing should be slightly sour and bold so that after tasting you immediately want another bite.
  7. Peel the cooled eggs and cut into not-too-small cubes so the pieces are noticeable but don’t fall apart when mixed. The yolks should be fully set, without a gray ring around them.
  8. Let the roasted cauliflower cool slightly – it should be warm but not hot to the touch so it doesn’t thin the dressing. Transfer to a large bowl, add the eggs, cucumbers, onion and most of the dill.
  9. Pour the dressing over everything and gently fold with a spatula from the bottom up so the florets don’t break apart. Taste and season with salt and pepper, remembering that cucumbers and mayonnaise are also salty.
  10. Serve immediately while the salad is slightly warm, or chill in the fridge for about 30 minutes until the flavors meld and the dressing thickens slightly and coats the ingredients evenly. Sprinkle with the remaining dill before serving.

Store the salad in an airtight container in the fridge for up to 2 days – the cauliflower will soften over time and the dressing will thicken and smell more strongly of dill. Stir gently before serving; do not freeze, as the cauliflower and eggs will become watery.
