Ingredients

  • chickpeas dried - 250 g
  • onion finely diced - 1 piece
  • garlic chopped - 2 cloves
  • bay leaf - 2 pieces
  • olive oil - 4 tablespoons
  • lemon juice - 1 piece
  • wheat flour for thickening, optional - 1 tablespoon
  • salt to taste
  • black pepper to taste
  • water for cooking the soup - 1.5 l
  • parsley chopped, for serving - 2 tablespoons

Preparation

  1. Rinse the chickpeas, cover with plenty of cold water, and leave to soak overnight.
  2. The next day, drain the water, rinse the chickpeas, transfer them to a pot, cover with 1.5 liters of fresh water, add the bay leaves, and bring to a boil. Simmer over low heat for about 50–60 minutes, until the chickpeas are soft but not falling apart. Add a little water if needed.
  3. Heat 2 tablespoons of olive oil in a pan over medium heat. Add the onion and sauté for 3–5 minutes, until it softens and becomes slightly translucent. Add the garlic and cook for about 1 more minute, stirring, until fragrant.
  4. Transfer the sautéed onion and garlic to the pot with the chickpeas. Cook together for another 10 minutes so the flavors meld.
  5. In a small bowl, mix the flour with the lemon juice and 2–3 tablespoons of hot soup broth, whisking vigorously until no lumps remain. Pour the mixture into the pot, stirring the soup constantly, and cook for another 5 minutes until slightly thickened.
  6. Add the remaining 2 tablespoons of olive oil and season the soup with salt and pepper. Remove the bay leaves.
  7. Serve hot, sprinkled with chopped parsley. If the soup is too thick, thin it with a little hot water.
