  • carrots peeled - 600 g
  • vegetable oil - 2 tablespoons
  • honey - 1.5 tablespoons
  • thyme dried leaves or fresh, finely chopped - 1 teaspoon
  • lemon juice - 1 tablespoon
  • salt to taste
  • pepper to taste
  • parsley for sprinkling, finely chopped - 5 g

Preparation

  1. Preheat the oven to 200°C (top and bottom heat). Line a baking tray with baking paper so the honey glaze doesn’t stick and releases easily after baking.
  2. Peel the carrots and cut them into batons or thick slices of similar thickness. Leave thin tips whole and halve the thicker parts so all pieces roast evenly.
  3. In a large bowl, mix the oil, honey, thyme, lemon juice, salt and pepper until you have a sticky, glossy sauce. Taste it – it should be distinctly sweet‑tangy with a herby aroma.
  4. Add the carrots to the bowl and mix thoroughly with your hands or a spoon until every piece is evenly coated in a thin layer of glaze, with no dry spots or puddles of sauce at the bottom.
  5. Spread the carrots on the baking tray in a single layer so the pieces barely touch. If they’re piled up, they’ll start to steam and release liquid instead of browning.
  6. Roast for about 25–30 minutes, gently stirring every 10 minutes. The carrots are done when a fork slides in easily and the edges are lightly browned and caramelized.
  7. If after 25 minutes the carrots are soft but pale, increase the temperature to 220°C for the last 5 minutes, watching closely so the honey on the edges of the tray doesn’t blacken.
  8. After taking them out of the oven, sprinkle the carrots with chopped parsley. Serve immediately while they’re hot, glossy from the glaze and slightly sticky to the touch.
