  • flour about 1/2 cup - 80 g
  • potato or corn starch - 2 tablespoon
  • chives chopped - 3 tablespoon
  • salt for cooking and the batter
  • white pepper can be replaced with black pepper - 0.25 teaspoon
  • oil for frying - 4 tablespoon
  • soy sauce for the sauce - 3 tablespoon
  • vinegar you can use apple cider vinegar - 1.5 tablespoon
  • sugar for the sauce - 1 teaspoon
  • garlic finely chopped, for the sauce - 3 clove
  • water for the sauce - 2 tablespoon
  • sesame oil optional, for the sauce - 0.5 teaspoon

Preparation

  1. Divide the cauliflower into small florets, rinse thoroughly, and drain. In a large pot, bring water with 1 teaspoon of salt to a boil, add the florets, and cook for 5–6 minutes, until tender but not falling apart—the fork should go in with slight resistance.
  2. Drain the cauliflower in a colander and leave for a few minutes to steam‑dry well—the surface should look dry, not wet. Transfer to a bowl and mash with a fork or potato masher into small pieces, leaving noticeable chunks.
  3. Add the eggs, flour, starch, finely chopped chives, salt, and white pepper to the bowl. Mix until you get a thick, sticky batter that slowly falls off the spoon. If the batter is watery and spreads like pancake batter, add 1–2 tablespoons of flour.
  4. Heat 2 tablespoons of oil in a wide pan over medium heat until it starts to shimmer. Spoon the batter into the pan, forming fritters about 7–8 cm in diameter, and gently flatten them with the back of the spoon so they have an even thickness.
  5. Fry the fritters for 3–4 minutes on one side, until the bottom is distinctly golden and the edges look matte and set. If, when you try to lift a fritter, it sticks firmly, give it another minute until it starts to release from the pan on its own.
  6. Carefully flip the fritters and fry for another 2–3 minutes, until the second side is evenly browned and lightly crispy. Transfer to a plate lined with paper towels to drain off excess oil.
  7. Repeat frying with the remaining batter, adding 1 tablespoon of oil at a time if needed. Keep the heat at medium—if the oil starts to smoke heavily, lower the temperature, otherwise the fritters will darken too quickly and stay too wet inside.
  8. Make the sauce: in a small bowl, mix the soy sauce, rice vinegar, sugar, water, and sesame oil until the sugar dissolves. Add the finely chopped garlic and stir—the sauce should smell intense and remain thin.
  9. Serve the fritters hot, straight from the pan, drizzled with the sauce or with the sauce in a small bowl for dipping. Just before serving, you can sprinkle them with extra chives or toasted sesame seeds for extra crunch.
