Celery, Apple and Walnut Salad Recipe

Celery, apple and walnut salad is a crunchy take on the classic Waldorf salad, adapted to Polish pantry staples. It combines fresh celery, sweet‑tart apples, raisins and toasted nuts in a light yogurt‑mayonnaise dressing that enhances rather than masks the flavor of the vegetables.

This is a homemade, simplified version of American Waldorf salad, using ingredients that are widely available in Poland. It fits well into a winter menu, replacing heavier mayonnaise‑based slaws.

This salad brings a lot of crunch and freshness to occasions where you would usually reach for heavier mayonnaise‑based sides. The sweet apple and raisins balance the savory celery, while the nuts give it the feel of a restaurant‑style composed salad. At the same time, all the ingredients are easy to find in a regular supermarket.

How to serve

Serve well chilled as a side to roast chicken, pork loin or meat patties instead of heavier slaws. It also works great as a light second breakfast for work with a slice of wholegrain bread. For parties, portion the salad into small glasses or bowls and sprinkle the top with a little freshly chopped nuts.

Watch out for

  • Don’t add warm nuts to the dressing – wait until they are completely cool or the dressing may split.
  • If you don’t remove the strings from the celery, the salad will be stringy and unpleasant to eat.
  • It’s easy to oversweeten the salad with honey – add it gradually, tasting after each addition.

Substitutions

  • You can replace walnuts with pecans or toasted flaked almonds.
  • Honey can be swapped for maple syrup or a pinch of sugar if you prefer a more neutral sweetness.

Ingredients

  • celery stalks - 4 stalk
  • crisp apple - 2 piece
  • walnuts - 40 g
  • raisins - 30 g
  • yogurt thick natural - 120 g
  • mayonnaise - 1 tablespoon
  • lemon juice - 1.5 tablespoon
  • honey - 1 teaspoon
  • salt
  • pepper ground black

Preparation

  1. Roughly chop the walnuts. Place them in a dry pan and toast for 2–3 minutes over medium heat, stirring often, until lightly golden and fragrant. Transfer to a plate and leave to cool completely.
  2. Wash the celery thoroughly, especially at the base of the stalks where sand collects. If needed, use a knife to lift the tough strings along the edge and pull them down the length of the stalk – the removed fibers should come off in long strands.
  3. Slice the cleaned celery into very thin slices or half‑moons. The pieces should be bite‑sized – when cut, the stalk should crunch under the knife and the slices should keep a clear structure rather than falling apart.
  4. Wash the apples, remove the cores and cut into thin matchsticks or small cubes. Immediately drizzle with 1 tablespoon of lemon juice and gently toss so every piece is coated – the apples will stay light in color and firm.
  5. If the raisins are very dry, cover them with hot water or apple juice for 5–10 minutes, then drain thoroughly. They should become soft and slightly plump, without hard, dry centers.
  6. In a medium bowl, mix the yogurt, mayonnaise, remaining lemon juice, honey, a pinch of salt and pepper. The dressing should be creamy, slightly sweet‑tart and fluid enough to thinly coat a spoon rather than running off like water.
  7. In a large bowl combine the sliced celery, apples, drained raisins and completely cooled nuts. Pour over the dressing and gently fold with a spoon or spatula, lifting the ingredients from the bottom, until everything is evenly coated.
  8. Refrigerate the salad for 10–15 minutes so the flavors meld and the dressing thickens slightly. Stir again before serving, taste and, if needed, adjust with a pinch of salt or a little lemon juice until the flavor is bright but not overly sweet.

Store the salad in the fridge for up to 2 days. Over time the apples soften, the celery loses some of its crunch, and the dressing thickens and separates slightly – always stir before serving.
