Bulgur Salad with Cucumber and Dill Recipe

Bulgur salad with cucumber and dill is a light Polish twist on tabbouleh, where fresh dill, cucumbers and bell pepper play the main roles. Nutty bulgur is combined with crunchy vegetables and a mustard–lemon dressing that adds tang and a gentle kick. It keeps well, so it’s great for lunchboxes and snack tables.

This is a loose nod to Middle Eastern tabbouleh, but with a Polish twist: dill, pickled cucumbers and neutral rapeseed oil. Thanks to that, the salad tastes familiar while being lighter than traditional mayonnaise-based salads.

The combination of slightly nutty grains with crunchy vegetables and tangy additions makes a salad that is both light and satisfying. It’s a great way to sneak more grains into everyday meals in a form other than the classic grain-with-sauce plate.

The biggest mistake is rushing: if you add the dressing to warm bulgur, it will soak it up like a sponge and the salad will be dry after an hour., After cooking I always spread the bulgur in a wide bowl, fluff it with a fork and wait until it’s completely cool to the touch., When I make the salad the day before, I add the dill and fresh cucumber in the morning – the greens don’t darken and the cucumber stays pleasantly crunchy.

How to serve

Serve as a side to grilled vegetables, fish or chicken, especially at summer get-togethers in the garden., For a main-course version, add feta, grilled halloumi or drained chickpeas to turn it into a complete meal., It also works very well as a filling for tortillas or pita bread with some lettuce.

Watch out for

  • Don’t mix the vegetables with hot bulgur – the cucumbers will soften and release a lot of juice, and the herbs will lose their color.
  • With very salty pickled cucumbers it’s easy to oversalt the salad, so always taste before the final seasoning.
  • Don’t cut the cooling time short – warm bulgur will soak up all the dressing and the salad will end up dry.

Substitutions

  • You can replace bulgur with small pearl barley or couscous to shorten the preparation time.
  • Pickled cucumbers can be swapped for lightly fermented cucumbers if you want a milder, less sour flavor.
  • Replace rapeseed oil with olive oil if you prefer a more Mediterranean character.
  • You can swap Sarepska mustard for wholegrain French mustard for a milder, more textured dressing.

Ingredients

  • bulgur - 150 g
  • water or vegetable stock - 300 ml
  • fresh cucumber - 1 piece
  • pickled cucumbers - 2 pieces
  • bell pepper red - 0.5 piece
  • fresh dill - 0.5 bunch
  • chives - 0.5 bunch
  • oil rapeseed or olive - 3 tablespoon
  • lemon juice - 1.5 tablespoon
  • mustard Sarepska or mild table mustard - 1 teaspoon
  • salt and pepper
Main Ingredient: bulgur

Preparation

  1. Rinse the bulgur in a sieve under running water until the water runs clear. Transfer to a pot, cover with water or stock so the liquid is about 1 cm above the grains, and lightly salt.
  2. Bring to a boil, then reduce the heat to low, cover and cook for 10–12 minutes, until the bulgur has absorbed the liquid and is tender but springy, with no hard center when tasted.
  3. Remove the pot from the heat and let stand, covered, for 5 minutes so the grains can finish steaming. Transfer the bulgur to a large bowl, fluff with a fork until loose and lump-free, then let it cool completely.
  4. Wash the fresh cucumber and peel if needed. Cut in half lengthwise, remove the soft seeds if it’s very watery, and dice finely so the pieces don’t dominate the bulgur in each serving.
  5. Dice the pickled cucumbers finely, then gently squeeze them in your hands or in a sieve to remove excess brine until they no longer drip – this keeps the salad from becoming watery.
  6. Wash the bell pepper, remove the core and white membranes, and dice finely. Rinse the dill and chives, dry very well on paper towels and chop finely so they distribute evenly through the bulgur.
  7. In a small bowl, mix the oil, lemon juice, mustard, a pinch of salt and pepper. Whisk vigorously with a fork or small whisk until the dressing is smooth, slightly thick and uniformly cloudy, with no separate layer of oil.
  8. Add the cooled bulgur to a large bowl along with the fresh cucumber, pickled cucumbers, bell pepper, dill and chives. Gently mix with a wide spoon so you don’t compact the grains into clumps or crush the vegetables.
  9. Pour the dressing over the salad and mix again until every grain and vegetable piece is lightly coated. Taste and season with extra salt, pepper or lemon juice if you prefer a more pronounced flavor.
  10. Chill the salad in the fridge for 20–30 minutes so the bulgur can absorb some of the dressing and the flavors meld. Stir again before serving, breaking up any clumps of bulgur.

In fridge: 3 days
Freezing: No

Store the salad in an airtight container in the fridge for up to 3 days; over time the bulgur absorbs more dressing and the cucumbers lose some crunch and release more juice. Stir well before serving and, if needed, add a little extra oil or lemon juice to refresh the flavor.
