Buckwheat Bake with Mushrooms and Cheese Recipe

This buckwheat bake with mushrooms and cheese is inspired by the filling used in Polish pierogi and croquettes, but served as a convenient oven tray bake. Earthy buckwheat, well‑reduced mushrooms and onion create a compact, creamy interior under a golden cheese crust. This version is meatless, hearty and keeps well when made ahead.

This dish draws heavily on traditional Polish buckwheat‑and‑mushroom fillings, moving them from pierogi and croquettes into the form of a family‑style oven bake.

It combines the flavour of the familiar buckwheat‑and‑mushroom filling with the convenience of a one‑tray meal. Buckwheat takes centre stage here, but thanks to the cream and cheese it’s neither dry nor bitter. It’s a good way to win over people who usually avoid buckwheat.

Chef's tips

If you use unroasted buckwheat, season it with a slightly heavier hand with pepper – it has a milder flavour than roasted groats. The most common mistake is mushrooms that are too wet; fry them until the bottom of the pan is almost dry and the edges of the mushrooms are lightly browned. Before putting the dish in the oven, taste a spoonful of the mixture – at this stage it should be just a touch over‑seasoned.

How to serve

Serve with sauerkraut, pickled cucumbers or carrot slaw to add acidity to the buckwheat‑and‑cheese interior. It works well as a main course for a dinner with several people or as meal prep for lunchboxes for 2–3 days. On the second day you can fry cubes of the bake in a pan like croquettes without breadcrumbs.

Watch out for

  • Don’t mix the eggs with completely hot buckwheat – wait until it’s clearly warm, otherwise the eggs will scramble into lumps.
  • Mushrooms that are fried too briefly will release their juices in the dish and thin out the mixture.
  • A layer of cheese that’s too thick can burn before the centre has time to set – it’s better to use an even, thinner layer.
  • Don’t press the mixture too firmly into the dish, or the bake will turn out dense and dumpling‑like.

Substitutions

  • Replace part of the buckwheat with barley groats if you want a milder, less “nutty” flavour.
  • Add about one‑third oyster mushrooms to the button mushrooms for a meatier texture and deeper aroma.
  • Swap the cream for thick natural yoghurt, adding a tablespoon of oil to keep the creaminess.
  • Replace the yellow cheese with a mix of gouda and cheddar if you like a more pronounced flavour.

Ingredients

  • buckwheat groats dry, raw or roasted to taste - 200 g
  • button mushrooms - 400 g
  • onion - 2 pieces
  • yellow cheese - 180 g
  • eggs - 2 pieces
  • cream 12–18% fat - 100 ml
  • oil - 2 tablespoons
  • butter optional, for flavour - 10 g
  • parsley finely chopped - 2 tablespoons
  • salt
  • black pepper

Preparation

  1. Rinse the buckwheat and cook it in salted water until tender but still loose. Drain, spread thinly on a plate and leave to cool – the grains should separate easily between your fingers and not clump together.
  2. Preheat the oven to 190°C (top and bottom heat). Thoroughly grease a baking dish with oil or butter, including the sides, so the bake doesn’t stick when slicing.
  3. Heat 2 tablespoons of oil in a large frying pan. Add the finely chopped onion and fry for 3–4 minutes, until glossy with a few golden edges and soft when pressed with a spoon.
  4. Add the sliced mushrooms. Fry for 8–10 minutes over fairly high heat without a lid, until they release their juices, the liquid evaporates and the mushrooms shrink noticeably and brown. Towards the end add the butter, season with salt and pepper.
  5. In a large bowl, mix the buckwheat with the hot mushrooms and onion. Add the chopped parsley and half of the grated cheese; the mixture should be evenly “studded” with mushrooms and slightly moist from the fat.
  6. In a separate bowl, beat the eggs with the cream and season with a pinch of salt and pepper. The mixture should be uniform, slightly thick, with no streaks of egg white.
  7. Pour the egg‑and‑cream mixture into the slightly cooled buckwheat and mix thoroughly. The mixture should be moist and lightly sticky but not runny; if it seems dry, add 1–2 tablespoons of cream or milk.
  8. Transfer the mixture to the baking dish, press down lightly with a spoon, smooth the top and sprinkle with the remaining cheese to form an even, not too thick layer with no buckwheat showing through.
  9. Bake for 25–30 minutes, until the cheese has completely melted, lightly browned and the centre has set – when you press gently in the middle with a spoon, the mixture should feel springy with no liquid seeping out.
  10. Remove the bake from the oven and leave to rest for about 10 minutes. During this time the inside will firm up and you’ll be able to cut neat squares that don’t fall apart when lifted.

After chilling, the buckwheat firms up slightly and the portions are more compact, but still juicy thanks to the cream and cheese. Reheat covered in the oven or in a pan with a spoonful of water or stock until the cheese is soft again.
