Watch out for

Ingredients

  • potatoes - 400 g
  • eggs - 4 pieces
  • cheese yellow - 80 g
  • 18% cooking cream - 80 ml
  • butter - 1 tablespoon
  • chives - 2 tablespoons
  • salt
  • pepper ground black

Preparation

  1. Preheat the oven to 190°C (top and bottom heat). Prepare 4 ovenproof ramekins and place them on a baking tray so you can slide them in and out of the oven in one go.
  2. Peel the potatoes and slice them very thinly, about 2–3 mm. A well-cut slice should be slightly translucent against the light and bend easily without breaking – this way it will soften quickly.
  3. Thoroughly grease the ramekins with butter, including the sides. You can sprinkle the bottoms with a thin layer of breadcrumbs, which will form a delicately crisp layer under the potatoes after baking.
  4. Arrange a layer of potato slices on the bottom of each ramekin, overlapping them like roof tiles. Lightly salt, sprinkle with pepper and a little grated cheese.
  5. Add a second layer of potatoes, again lightly salting and peppering. The layers should not exceed two-thirds of the ramekin height so there is room for the cream, cheese and egg.
  6. In a mug, mix the cream with a pinch of salt and pepper. Divide it evenly between the ramekins – it should reach about halfway up the potatoes and just lightly coat them, not cover them completely.
  7. Place the tray with the ramekins in the preheated oven and bake for 12–15 minutes, until the potatoes have softened. Check with a fork in the centre of a portion: it should go in with slight resistance but without the crunch of raw skin.
  8. Remove the tray. Crack one egg into a small bowl, check there are no shell pieces, then gently pour it into the centre of a ramekin over the potatoes. Repeat with the remaining eggs, trying not to break the yolks.
  9. Sprinkle the top of each portion with the remaining grated cheese and a little pepper. Return to the oven and bake for 6–8 minutes, until the whites are completely white and opaque and the yolks only gently wobble when you move the tray.
  10. If you prefer firmer yolks, extend the baking time by 2–3 minutes, checking every minute. After taking them out of the oven, wait 1–2 minutes – the eggs will continue to cook slightly. Sprinkle with chopped chives and serve immediately.

They are best straight after baking, while the yolk is still runny. After chilling and reheating, the eggs will set completely and the potatoes will become firmer, but still creamy from the cream.

When I’m expecting overnight guests, I arrange the potatoes in the ramekins the evening before, keep them in the fridge covered with plastic wrap, and in the morning I just add the cream and eggs and slide everything into the oven.
