Let the sugar syrup cool completely, otherwise it will melt the ice and the lemonade will lose its strong flavor more quickly. Blend the strawberries really smooth and press them thoroughly through a sieve – seeds and fibers can spoil the drinking experience. Always start with the minimum amount of extra water, taste, and only then dilute more, because it’s easier to add water than to rescue an overly watered-down drink.

How to serve

Serve in tall glasses with plenty of ice, a slice of lemon, and whole strawberries on a cocktail stick – it looks impressive at a garden barbecue. It goes great with burgers, grilled chicken skewers, or simple hot dogs when you’re doing an at-home “American-style BBQ.” It’s also a fantastic drink for kids’ backyard birthday parties – you can prepare a pitcher in advance and keep it in the fridge, then just add ice and mint right before serving.

Ingredients

  • strawberries - 400 g
  • lemon - 4 pieces
  • sugar - 120 g
  • water - 1 l
  • ice cubes - 10 pieces
  • mint - 5 sprigs

Preparation

  1. In a small saucepan, mix 120 g sugar with 200 ml water. Heat over low heat, stirring, until the sugar has completely dissolved and you get a clear syrup. Set aside to cool.
  2. Wash the strawberries and remove the stems. If you’re using frozen berries, thaw them first or use them partially frozen so the lemonade is extra chilled.
  3. Scrub the lemons thoroughly in warm water, cut them in half and squeeze out the juice, making sure no seeds get in. You should get about 150–180 ml of juice.
  4. Transfer the strawberries to a blender, add the lemon juice and cooled sugar syrup. Blend until completely smooth.
  5. Pour the blended mixture through a sieve into a large pitcher, pressing with a spoon to remove the seeds and larger pieces of fruit.
  6. Add the remaining water (about 800 ml) and mix well. Taste the lemonade and sweeten more if needed, or add a little water if the flavor is too intense.
  7. Add the ice cubes and a few sprigs of fresh mint to the pitcher. Set aside for 10 minutes so the flavors meld and the drink chills thoroughly.
  8. Serve the lemonade in tall glasses with ice, a slice of lemon, and a mint leaf.

I usually make a double batch before a weekend barbecue at our allotment and pour half into bottles to take in a cool bag to the beach. I also often freeze the leftovers in popsicle molds – the kids treat it like sorbet.
