American-Style Black Bean Veggie Burger Recipe

Black bean burgers are a popular meat alternative in American food trucks and burger joints. They’re filling, slightly spicy, and have a pleasant, lightly crispy crust on the outside. The flavor is reminiscent of a mix between a bean patty and a classic burger – they hold together well in the bun and pair perfectly with typical toppings like lettuce, tomato, and sauce.

This black bean burger is inspired by American food trucks, where veggie versions are given just as much care as the meaty classics. It has an intense, slightly smoky character thanks to paprika and cumin, and a crispy crust that contrasts beautifully with the soft interior. The texture is firm enough that the patty doesn’t fall apart in the bun, even when you load it up with plenty of sauces.

Chef's tips

The key is to dry the beans very well – if they’re too wet, the patties will fall apart and soak up too much oil. Season the mixture more boldly than you think at this stage, because the flavor will mellow after frying; fry a small “test” patty and, if needed, add more salt to the whole batch. Fry the burgers over medium, not high heat – they need a bit of time to set in the middle before they brown deeply.

How to serve

They’re best served in lightly toasted buns with lettuce, pickles, and a creamy yogurt- or mayonnaise-based sauce to balance the heat. To drink, pair with a cold craft IPA or lime-and-mint lemonade, especially if you’re making them on a grill pan on the balcony. They work perfectly as the main dish for a home “burger night” on a Friday evening, when everyone can assemble their favorite version from toppings laid out on the table.

Ingredients

  • black beans - 400 g
  • onion - 0.5 pieces
  • garlic - 2 cloves
  • breadcrumbs - 60 g
  • egg - 1 piece
  • paprika - 1 teaspoon
  • cumin - 0.5 teaspoons
  • chili sauce - 1 tablespoon
  • salt - 0.75 teaspoons
  • black pepper - 0.5 teaspoons
  • vegetable oil - 3 tablespoons
  • burger buns - 4 pieces
  • lettuce - 4 leaves
  • tomato large - 1 piece
Main Ingredient: beans

Preparation

  1. Drain the beans in a sieve and rinse thoroughly under running water, then drain well and pat dry with paper towels so the mixture isn’t too wet.
  2. Peel and finely chop the onion, and finely chop the garlic as well.
  3. Heat 1 tablespoon of oil in a pan, add the onion and fry for 3–4 minutes over medium heat until softened and lightly translucent. Add the garlic and fry for 1 more minute, stirring.
  4. Transfer the beans to a large bowl and mash them with a fork or potato masher until most of the beans are crushed but some small pieces remain for texture.
  5. Add the sautéed onion and garlic, breadcrumbs, egg, paprika, cumin, chili sauce, salt, and pepper to the beans. Mix thoroughly with your hand or a spoon until you get a thick mixture.
  6. If the mixture is too loose and sticky, add a bit more breadcrumbs; if it’s too dry, add 1–2 tablespoons of water.
  7. Divide the mixture into 4 portions and shape into flat patties roughly the same diameter as the buns. Chill them in the fridge for 10 minutes to firm up slightly.
  8. Heat the remaining oil in a pan over medium heat. Fry the burgers for 4–5 minutes on each side until golden and crispy on the outside.
  9. Slice the buns and lightly toast them in a dry pan or in the oven until warm and slightly crisp.
  10. Place a lettuce leaf on the bottom half of each bun, then a bean burger, tomato slices, and your favorite sauce (e.g. mayonnaise, yogurt sauce, barbecue). Cover with the top half of the bun and serve immediately.
